Is it possible to change the text of the autoresponder email sent when a user emails to support@ and creates a new ticket ?

Yes, all you need to do is edit the email_autoresponder template.

I am not sure if I understood your query. Could you please re-phrase? The software allows the client to choose the language in which the software UI should be displayed in.
