Sending emails

Hi,

I would like to enable the setting somewhere to SEND emails to clients (SMTP).
I don't want to receive any email so I don't need IMAP or POP3.
I have a Windows Server 2003 with IIS 6.0 and Exchange Server.
Can I enter somewhere the address or IP of my Exchange Server so it will send email from that server?

I can only find things in the admin panel like email piping but that it to receive mail only.
I want to set the address of my Exchange Server which the mails are send from.
I only need this mailing to confirm registration mails and update our clients for new reply's.

Where or how can I do this?

Admin CP -> Settings -> CPU Optimization & Server -> SMTP Settings
